Vegan, Gluten-Free Jaffa Cake And Eat It!
No butter, no eggs, no animals at all and so of course, this is delicious!
1 and a quarter cup of GF flour (I use Doves Farm)
1 cup organic vegetable oil
1 cup organic dark brown sugar
A half cup of cocoa (I use Indigo Herbs Raw Cacao Powder- very, very good)
1 teaspoon of salt, baking powder and a tablespoon of cider vinegar
1 cup of warmed orange juice (grate rind off first and save)
Blend in the blender into a wet batter and then bake on a medium high until knife comes out clean. Takes about 20 minutes. Don’t burn or brown at all as it goes bitter. Can take out a few minutes before and residual heat will continue cooking it. Allow to cool completely.
Then blitz orange zest, brown sugar, cacao and vegan butter (I used coconut oil) into the icing and ice bake. Top with more orange zest…
