Nut Butter Truffles…

Hot on the heels of my delish Hemp Butter Scones, I wanted to make something snack-y that was savory and a powerful cycling agent; basically something I could eat quickly that didn’t fall to bit in my panniers. I still has my amazing Indigo Herbs of Glastonbury stash so I came up with the idea of savory truffles, like the raw balls thingies I love so much. I knew I could use the nut butter as the oily, unctuous ‘wetness’ and the raw protein powder as the bulk but how to make them super tasty? Well see below…

Nut Butter Truffles: toasted, mixed nuts, nutritional yeast, salt, raw pumpkin seed butter, raw hemp protein powder, teeny pinch of cumin power, teeny pinch of smoked paprika, dried onions.

Ok, in a blender chop some toasted nuts and seeds and onions, then stir in the spices and herbs, the salt and the nutritional yeast and protein powder. Then pulse in blender whilst adding nut butter. Will form a oily, rough dough. Take out and shape into balls with damp hands, roll in finely chopped nut mix and fridge. If your dough is too dry, add a few drops of cold water until it comes together.

They come out like little super tasty, cheesy, salty truffles with that delicious underlying flavour of rich nut butter. Protein packed, almost like raw falafels and you could certainly add sesame seeds, tahini and more spices…

The pumpkin seed butter and the hemp protein powder gave a lovely ivy green colour and these lasted a few days, eaten as a bike-riding snack as planned and again with a fresh cucumber pickle, yoghurt and a few hot chilli slices on the side…
